WHere is a simplified interpretation of a beverage found on a new menu. Designed as a batch premix that is packed with essence associated with holiday season, making it perfect for your holiday party. Any leftover syrup for brunch beverages, sweets, or for another batch of bikinis.
Bikini
Makes enough for 10 servings
For the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Drink (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Citrus Syrup: Place all the components in a pan, bring to a simmer, mixing to dissolve. Next, remove from the heat and leave to cool completely. Transfer into a sterilised bottle, cap it and refrigerate it in the refrigerator, it can be stored for about a month.
To make Premix: Pour every liquid ingredients into a sizeable container, let it rest for 60 minutes, then pass it through , ideally through cheesecloth, so it's completely strained.
When ready to serve: Measure 85ml of your batch mix to a cocktail shaker containing ice, and agitate carefully for about 60 seconds to cool it down. Pour into a chilled martini glass or similar, top with the cranberries and complete it with a light spray of mandarin oil over the drink.
